Blueberry Protein Cake





Hey fellow Stompers!

How cool is our new centre on Liverpool Street? If you haven't been you should come check it out - sometimes there is even clean eating treats for you to try, which is what I'm posting now ;)

When we opened on the 20th of August, I made this awesome (if I do say so myself) blueberry and almond protein cake to celebrate. Some of you were able to try it.. but it went pretty quickly - even Carmen's kids loved it! Personally I think that if kids will eat something healthy, then you know you're onto a winner :D

For the players who didn't get to taste it, here's the recipe! Give it a try, it's pretty foolproof.

BLUEBERRY PROTEIN CAKE 

1 cup rolled oats
2-3 medium over-ripe bananas 
4 egg whites 
1/2 cup vanilla protein powder 
170g unsweetened greek yoghurt 
2 tsp ground cinnamon 
2 tsp natural sweetener 
1 cup blueberries 
Chopped almonds


METHOD
- Preheat the oven to to 175C and line a cake tin with baking paper
- Blend all ingredients (except the blueberries and almonds)
- Pour batter into the tin and sprinkle blueberries and almonds on top
- Bake for 30-40 minutes and then leave to cool for 5 minutes on a wire rack

Serves 12 | 108 calories per serve | 7.9g protein | 11.8g carbs | 6.5g sugar




Have fun with this guys, there are so many ways you can modify this to suit your tastebuds.. different fruits, different nuts, different protein powder flavours.. you name it!
