Coconut Fluff Pancakes

Pancake Sunday took on a different flavour this morning, and the whole family loved it!  Top these fluffy lovelies with yoghurt for extra protein and fresh fruit for sweetness.

Ingredients
2 eggs, whisked
400ml can coconut milk
2 tablespoons melted coconut oil or butter
1/4 cup coconut flour
3/4 cup buckwheat flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shredded coconut

Method
Combine the eggs, coconut milk and coconut oil.  Stir in the remaining ingredients.  Melt a generous dollop of butter or oil in a frying pan over medium-low heat.  Pour in some batter.  The mixture will make 4-6 large or 8-12 medium pancakes.  When the surface starts to bubble, flip and cook the other side.  Serve with fresh fruit, natural yoghurt or your favourite pancake toppings.
